Yuki no Bosha Junmai Ginjo Sake - NV (300ml)
While not a Nama or unpasturized sake, this is one of the most natural versions of sake that can be made.Ā This is made from rice that has been polished to 55% and is produced with less air exposure than many sakes.Ā Ā It is also a muroka, meaning it has not undergone any charcoal filtration and genshu meaning it has not been diluted, though it is a very balanced 16% alcohol. Hints of anise on the nose; mango and strawberry on the palate, finishing with a white pepper spice.
