I went into this pour wanting to love it. On paper, it checks every box: a 9-year rye aged in a Canton barrel, coopered from staves air-dried for 36 months. These are high level barrels that allow natural microbial activity to soften the more aggressive compounds of new American oak. It’s the kind of detail that promises elegance before the glass even hits the table.

The nose, however, opens with far less restraint. It’s unmistakably rye-forward, herbaceous and assertive, with dill, fennel seed, cracked pepper, and a layer of toasted leather. There’s weight here, but no abrasion; it’s rich, round, and composed. With time, a familiar floral honey note emerges, a signature often found in Willett ryes, offering lift and contrast.

On the palate, the whiskey begins to reveal its full architecture. The brighter herbal notes deepen into something more savory and contemplative, fennel seed evolves, Sichuan peppercorn adds a tingling, almost citrusy spice, and the oak begins to step forward with intention. This is where the Canton barrel makes its presence known.

The wood is strikingly refined: sandalwood, cedar, and dried tobacco form a core that anchors the whiskey. It’s not loud oak, it’s poised, aromatic, and integrated. The interplay between spice, sweetness, and wood is seamless, each element reinforcing the next rather than competing for attention.
