Single origin, wild fermented, minimal or no additions.  This is a lively and alive product, truly crafted in an old-world way with respect of time and the seasons allowing the cider to finish its fermentation as it will in large neutral oak vessels.  Complex aromas and great length on the palate.  Superb!
