The term “pétillant naturel” (pét-nat) refers to the winemaking process used to produce this fizzy wine. Each bottle is a unique, ecological “riff” on the juice and its occupants. Hence there can be tremendous variation in sweetness, mouthfeel, appearance, aromatics and flavor from bottle to bottle.
The bottle I sampled exhibited notes of mint, blood orange, strawberries and cream, and ripe red raspberries on the nose, bolstered by more of the same in the mouth. Mousse-like foam fills the mouth, with a firm acid spine that lengthens the finish and adds great tension. However, it is best for you to make your own tasting notes and find out what your bottle tastes like.
