The cuvée “Vielles Vignes” comes from multiple parcels of 65 year old vines on the right bank of the Serein River. With VV, Cyril strives for a rounded Chablis with a persistent palate. Fermentations are 1/3 in barrel and 2/3 in stainless steel. The wine is blended then aged 8 months in stainless steel. The result is a wine that is soft, rich and fresh on the nose, generous on the palate with a balance of minerality, fruit and discreet oak.
