Situated on a steep east-facing slope (20–25% gradient), this parcel rests on a marl-limestone base with clay. The soils are strewn with small, fossil-rich stones, contributing to the wine’s pronounced mineral profile.
Vines average approximately 15 years of age.
Production
Annual production: ~1,500 bottles
Vinification & Aging
Harvest timing is determined through careful monitoring of grape ripeness beginning in late August. Grapes are hand-harvested into small 12 kg crates to preserve fruit integrity.
A gentle pneumatic press cycle (~2.5 hours) is followed by overnight settling in stainless steel to allow natural clarification of the must. The clear juice is then transferred to French oak barrels, with approximately 30% new oak.
Both alcoholic and malolactic fermentations occur naturally in barrel, in line with Burgundian tradition. Lees stirring (bâtonnage) is employed judiciously, guided by ongoing tasting analysis to enhance texture and complexity.
The wine is aged for 12–15 months before bottling without filtration, timed according to favorable lunar cycles.
