One of the most typical and traditional Tuscan wine, the Vinsanto it is the symbol of Tuscan hospitality. Obtained from Malvasia and Trebbiano grapes dried on racks, fermented and aged in ā€œcaratelliā€ (kegs) in the spectacular Vinsantaia of the ā€œTorre Grandeā€ of the Castle where this dry dessert wine with a complex bouquet and taste slowly takes shape.

Grapes: Malvasia and Trebbiano

Fermentation and aging: Drying between September and November on racks in the room of withering of the Castle. Fermentation and aging in chestnut and oak ā€œcaratelliā€ (kegs).in the Great Tower. Maturation and aging in the ā€œcaratelliā€ for at least four years, until the almost complete fermentation of the residual sugar.

Tasting notes: dry structure, typical of the traditional vinsanto of ancient times, balanced by a delicate sweet note reminiscent of dried fruit, vanilla, honey, pipe tobacco. On the palate it is complex and extremely warm and persistent.

Pairings: all types of sweets and desserts, especially dry pastries. Excellent, if served slightly chilled, even in combination with blue cheese and fois gras.
