Equinox is a sketch of the Appalachian duality, from domesticated crops to wildcrafted foodstuffs. It speaks to the interaction between humans and the environment, and the defining interim between to two.

Deeper Dive

Equinox takes a note from the traditional French Gentiane aperitif. Our gentiane recreates a historically alpine profile with botanicals endemic to the mid-Atlantic. Starting with a base of hybrid grapes, we center the vintage on infusions of sweet potato, shagbark hickory, and yarrow. The result is a gentiane aperitif, tuned to the southern Appalachian landscape.

Plays Well with...

Brandy, whiskey, Old Tom gin.
Use in place of Suze for a spicier cocktail or add an ounce to your Old Fashioned.

Our take is that his is a big, brash and richer style than Suze, with additional sweetness and massive viscosity.  It should add a tremendous depth to cocktails.
